Ko'olau Distillery Tours

Ko'olau Distillery is the longtime dream and vision of close friends and U.S. Marine Corps veterans Lt. Col. Eric Dill and Lt. Col. Ian Brooks. They teamed up with 15-year beverage professional, Heather Pence to produce Old Pali Road Whiskey. Ko'olau Distillery was founded in 2018 and is a disabled veteran-owned business. Imagine rainwater naturally filtered through layers of volcanic rock for decades until it reaches the aquifer that feeds the new artesian well Ko'olau Distillery uses for its spirits. Tour the Ko‘olau Distillery and experience the 6-step journey through the whiskey-making process beginning with an introduction to the local ingredients and how they contribute to Old Pali Road Whiskey's unique flavor. Guests learn about mashing, fermenting, distilling, and aging, before bottle-filling and labeling by hand. The tour ends with a whiskey tasting. Tours are only available to adults 21 years and older with a valid ID and the price is $20.
