Ko'olau Distillery, founded in 2018 by U.S. Marine Corps veterans Lt. Col. Eric Dill and Lt. Col. Ian Brooks along with beverage professional Heather Pence, fulfills their longtime dream of crafting spirits, notably Old Pali Road Whiskey, in Hawaii. Their whiskey is made using rainwater filtered naturally through volcanic rock layers, sourced from a new artesian well. The distillery offers immersive tours guiding visitors through a six-step whiskey-making process, highlighting local ingredients' contribution to the whiskey's distinct flavor profile. The tour concludes with a tasting session, available exclusively to adults aged 21 and above for $20 per person.
