Description:

Bishop seems to be the last place where one might procure European fresh-baked goods, but Erick Schat's has been in business since 1938. An influx of Basque immigrants during the Gold Rush spurred a desire for the traditional recipes for doughy loaves from their homeland. Because it's perhaps the only Old World-style bakery in Inyo County, expect long wait times. By all accounts the pastries, pastramis, and loaves are well worth it.
