La Posta de Mesilla occupies an 1840s adobe compound that once served as a stagecoach stop and later became the Corn Exchange Hotel before being transformed into a small chile joint by 25 year old Katy Griggs Camuñez in 1939. Over time it expanded into a beloved family run restaurant known for its vibrant atmosphere and historic charm. Visitors come for classics such as the original Tostada Compuesta, as well as green and red chile enchiladas, chile rellenos, fajitas and rolled tacos. Desserts like homemade flan, empanadas and fried ice cream round out the experience and help make this New Mexican landmark a long lasting favorite.
