The Pink Adobe in Santa Fe was founded in 1944 by artist Rosalea Murphy inside a centuries-old adobe hacienda that once served as stables, and it quickly became a beloved gathering place for locals, travelers, and notable figures. Over time it grew from a small spot serving simple favorites to a landmark restaurant known for blending New Mexican and Cajun influences. Today it remains famous for dishes like French onion soup, the rib eye Steak Dunigan topped with green chile and mushrooms, hearty enchiladas, chile rellenos, and its popular Plato Mexicano combination plate.
