Tomasita's opened in 1974 when Georgia Maryol launched a small neighborhood cafe and named it after her friend and cook Tomasita Leyba, whose traditional recipes shaped the menu. The restaurant moved to its current location in the old railroad depot in 1979, which helped establish it as a Santa Fe landmark known for authentic Northern New Mexican cuisine. Popular dishes include red or green chile enchiladas, carne adovada, burritos, chile rellenos, and warm sopaipillas served with honey.
