The Red Iguana Statue, officially named Xochitonal, is a striking 33-foot-long and 12.5-foot-tall sculpture located at Red Iguana 2 in Salt Lake City. Created by Utah artist Stephen Kesler, this hyper-realistic iguana features over 120,000 hand-sculpted scales and 80 epoxy spines, embodying the mythical Aztec creature that guards the entrance to the underworld. Unveiled in 2017 to celebrate 50 years of the Cardenas family's culinary legacy, Xochitonal has become a beloved photo spot and a testament to the restaurant's vibrant cultural roots.
