Ruth’s Diner began in 1930 when Ruth Evans opened a small hamburger stand in Salt Lake City, later moving an old trolley car to Emigration Canyon in 1949 where the diner still operates today. The restaurant has grown into one of Utah’s most iconic spots, known for its cozy atmosphere and long history. Visitors come for comforting classics, especially the mile high biscuits with homemade jam, hearty breakfasts like biscuits and gravy and banana walnut French toast, and popular lunch and dinner dishes such as pulled pork tacos and Grandma Claire’s mac and cheese.
